Sweet and Sour Meatloaf


½ cup Tomato Sauce
2 Tbsp brown sugar
2 Tbsp cider vinegar
½ tsp prepared mustard
2 Tbsp beaten egg or egg substitute
4 Tbsp finely chopped onion
2 Tbsp crushed butter flavored crackers *
2 Tbsp minced fresh parsley
½ tsp salt
Dash pepper
1 lb lean ground beef or turkey

In a small bowl, combine tomato sauce, brown sugar, vinegar and mustard. Set aside.
 In another bowl, combine the egg, onion, crackers, parsley,salt pepper and ¼ cup of the tomato mixture.
Crumble beef or turkey over mixture and mix well. *I added in more crackers to make it the thickness I prefer. Shape into a loaf.
Place in a 8 inch square baking dish coated with cooking spray, top with remaining tomato mixture.

Bake uncovered at 350 for 45-50 minutes or until meat is no longer pink.

Let stand for 10 minutes before serving.

Makes 4 servings
