Burrito Bake
½ lb ground chuck, lean
1 can fat free refried beans
1 small can green chilies (optional)
2/3 cup reduced fat Bisquick
½ cup water
1 small jar taco sauce
½ cup reduced fat cheddar cheese
Cook ground beef then drain off fat. Add jar of taco sauce simmer on low.
In a medium mixing bowl combine refried beans, chilies (omit for milder flavor), bisquick and water. It will be sticky
Spray 10x10 baking pan with cooking spray
Spoon bean/bisquick mixture into pan, patting out until evenly divided
Spoon meat mixture on top
Sprinkle with cheese (I added extra cheese)
Bake covered at 375 for 30 minutes; uncover and continue baking 10-15 minutes until knife inserted comes out clean and cheese is golden.
Makes 6 servings
